Healthy Meal Plans: Week 27

This week I broke out some of my summer favorites including the best Grilled Buffalo Chicken Sandwiches, my favorite coconut shrimp dish, and some killer kabobs. 

It starts out with the Make Ahead Creamy Steel Cut Oats, a Southwest Stuffed Sweet Potato, and Slow Cooker Barbecue Pork. Monday brings Zucchini Ricotta Pasta and Tuesday is a Moo Shu Beef Stir-fry. Wednesday is Grilled Turkey Lula Kebabs and Thursday is Grilled Buffalo Chicken Sandwiches. To end the week, meals include Creamy Coconut and Tomato Shrimp and Grilled Chicken Tacos.

Here are some of the meals in this week’s meal plan!

Grilled Chicken Tacos: This easy to make grilled chicken tacos are marinated in lime juice and a homemade spice blend and are the perfect summer meal.

Southwest Stuffed Sweet Potatoes: These potatoes are stuffed with black beans, corn, tomatoes, and then covered in cheese for a hearty and healthy lunch.

Grilled Turkey Lula Kabobs: I love these Middle Eastern kabobs and this healthy version is made with lean turkey on the grill.

Creamy Coconut and Tomato Shrimp: This fifteen-minute dish couldn’t be more delicious. We make it all the time, especially for guests.
