Healthy Meal Plans: Week 26

Summer is officially here so let’s celebrate the nice weather! These week has some great grilling options, a fresh summer pasta, and one of my favorite salmon dishes that takes under 10 minutes to make.

It starts out with Quinoa Egg Muffins, Curried Tuna Salad, and Slow Cooker Beef Machaca. Monday brings Pasta with a No-Cook Fresh Tomato Sauce and Tuesday is Grilled Lemon Thyme Chicken Thighs. Wednesdays are Egg Roll Bowls and Thursday is Grilled Mediterranean Pork. To end the week, meals include Honey Garlic Salmon and Green Chili Burgers.

Here are some of the meals in this week’s meal plan!

Grilled Lemon Thyme Chicken: The secret to tender and juicy chicken every time is marinating the chicken in yogurt. Not only does this save tons of calories, it creates the most delicious and moist chicken.

Slow Cooker Beef Machaca: This is a recipe I have been making for years and I always come back to it. The spicy and smoky beef comes out perfectly tender and has so much flavor.

Honey Garlic Salmon: Honey and garlic make everything taste good and this couldn’t be more true for this fifteen minute salmon dish.

Egg Roll Bowls: Imagine all the delicious filling of an egg roll but in an easy to make bowl. This dish is so flavorful and incredible light and healthy.
