While I am a huge fan of charcoal grilled Rockfish and the simplicity of Salt/Pepper seasoning, birthdays call for something a bit more elegant. This recipe is rustic in it’s sensibilities but still special enough to be elegant. You can increase the chopped tomatoes if you’d like but I wouldn’t go to much further than 4 without adding more fish. If you want to spice it up a bit, just toss in a pinch of red pepper flakes. Add some RiverHouse Sourdough and a nice Porter.
So, Happy Day, Jeffrey Mathias!
